Gluten-Free Coffee Blondies

 

As I read back on my previous blondie recipe, it occurred to me that the weather takes a turn for the worse every time I make them. Indeed, it’s raining cats and dogs outside – so much for British summertime – though it’s hard to say whether or not it rains because of blondies. Either way, these blondies are awfully delicious and continue to propagate the exponential growth of my love for ground almonds – they have simply the most wonderful texture.

Strawberry and Pimms Clafoutis

Before we enter the blog proper, I feel it is important to make a couple of excuses. Firstly, I’m sorry that there have been no new recipe posts in the past week or so, but what I shall call a ‘negative life event’ took place and I haven’t found the time. However, we shan’t go any further into that since I’m not, as you may know, much of a sharer – I simply don’t feel the need. Secondly, this was supposed to be a post regarding a certain rhubarb, strawberry and orange compote. Unfortunately, the fates took time to collude against any honourable intentions I may have held and the photographing of the intended dessert fell flat on its face. I’m extremely glad to be back and I hope to bring you news of my recipe for individual rhubarb and custard galettes as soon as possible.

Chorizo and Kale Broth

As predicted, the weather here has become remarkably warm and jolly unseasonable. One would, at this time of the year, expect one’s breath to be made visible by a late-spring chill. However, as this paragraph begins to takes shape, my eyes find themselves met with a sky of unbridled blue. We appear to have skipped spring entirely and charged head-first into summer – perhaps June will become the new winter. We shall yet join the Australians in having my namesake, jolly ol’ St. Nick, presented with a surf board and speedos, rather than coat and gloves.

Chocolate Chunk Blondies

Today I went on what was essentially a compulsory, yet fully paid, food hygiene course organised by my employer. Apparently it is a requirement as at the bar in which I work we prepare and serve toasted sandwiches. This course wasn’t exceptionally useful as it ended up being a course in how to make use of common sense – by which I mean that it was no harder than it was useful. Still, I suppose if it means I get more/continue to get shifts it was one of the more worthy uses of my time. Anyway, to cut a long story short, what does one do having completed a food hygiene course? Go home and bake blondies following very little of the imparted advice, that’s what.
