Thai Carrot Soup

Autumn is now in full swing here in Wales, the mornings are growing cold and, according to some, snow isn’t too far away. With the weather in mind, soup appears to be the most sensible meal to opt for, particularly when the evening menu features a roast chicken. Not only is this soup incredibly comforting, it also brings with it all the health benefits of its fragrant ingredients. Ginger, for instance, is known to have many health benefits, from pain relief (check out this blog link) to prevention of nausea. It isn’t widely used in herbal remedies for nothing, you know.

Before we get onto the soup may I ask you, my beloved readers, whether your blog has also become akin to a full time job? I seem to find myself spending hours making sure every post is as good as it can be, commenting on other blogs, replying to comments on my blog – it really can take it out of you. Having said that, I’m still very much enjoying my blogging experience and shan’t be going anywhere for what I hope is a considerable period of time. However, I may no longer have the time to reply to every single comment simply because I’m now getting so many of the damn things I can’t keep up. Actually, I say “the damn things” but actually I love each and every one as it means you’ve actually taken an interest.

Autumnal Indian Soup

My real love for food lies in those dishes pervaded by a sense of warmth and richness, qualities which are epitomised by autumnal cuisine. The idea behind this dish came from a GoodFood recipe entitled Indian Winter Soup. However, it was used more as a guide for what one should do with pearl barley, something I had never cooked before, rather than as a set of defined directions. This meal was simply delicious, so warming and nutritious – this soup really does perfectly encapsulate what autumn, my favourite season, means for my kitchen.

In the past week, and particularly the past 3 or 4 days, I’ve begun what is commonly known as a “health-kick”. Basically this means walk everywhere, eat healthily and go for a 2.5 mile jog every other day. One thing I have completely stopped eating is bread – I haven’t touched the stuff. In some way I miss it, in others I don’t. Basically the problem with bread is that although good bread is cheap and tastes absolutely delicious, it can make one feel really bloated. When added to the fact that bread, and white bread in particular, is essentially a bad carbohydrate that, if eaten in excess, can really pile the pounds on. In addition I’ve completely stopped drinking cider, a drink which is even more bloating than beer, and a lot sweeter. So, recently I’ve started feeling much healthier and already a little slimmer.

It must be admitted that lentils are fast becoming one of my favourite foods. Even four years ago I wouldn’t even have considered eating them, and now really can’t get enough. Like potato they take on so much flavour, and are extremely healthy. This, in my opinion, makes them more suitable for spice-based dishes than chicken will ever be. Of course chicken has its virtues, but short of marinating it for 24-hours – which is a faff – in a dish like this it really becomes plain chicken surrounded by spices.
