Autumnal Minestrone

Minestrone, which when translated literally means ‘big soup‘, is a seasonal soup that can be made of whatever ingredients are at hand. The only fixed characteristics of minestrone are that it should contain pasta and plenty of delicious stock. As such, it is to be expected that a dish so undefinable would have myriad different variations and this, of course, is true. However, tomatoes are unlikely to be found high up on the list of ingredients that really make minestrone sing.

Autumn has certainly… descended and what will follow in its footsteps is a plethora of autumnal delights. As mentioned before, our apple tree has been full of life this year and has stayed true to its promise, even though other horticultural members of our usually bountiful garden haven’t. This is more than made up for, however, as the delightfully tasty, yet devilishly spicy chutney you see before you will demonstrate. This Apple and Cinnamon Chutney is utterly scrumptious and can be enjoyed in all manner of ways, though with cheese and crackers is certainly my favourite. Don’t let the amount of chilli in this recipe put you off; if that much heat isn’t to your taste, simply alter the recipe to suit – it’ll still retain all of its flavour. Enjoy!

This recipe was requested by friend Gemma in order that she could forego the expense of the Chinese takeaway. Naturally, I wanted to provide for this wee Scottish lass, but the idea also tickled my frugal weak-spot since one of my pet hates is perpetual takeaway eating – as Gemma’s request suggests, it isn’t particularly cost effective. Oh and your waistline may well benefit too!

Fragrant Red Lentil Dhal

This is my third dhal recipe, but it is fundamentally different from the other two in that it wasn’t conceived as a side-dish, though it may act as such. What this means is that while the flavour of the other two was delicious, it was exceedingly simple; whereas the taste of this dhal will excite and ignite your palette, though not in a literal sense. Indeed, the combination of black onion seeds, which are surprisingly fragrant, and garam masala, a spice mix known for its dark perfume and body, make this an enticing prospect for even the more snobbish taste buds in existence.
