Indian Minced Beef with a Fresh Tomato Salad

There are many things one can cook with a punnet of minced beef; it is perhaps one of the most versatile ingredients available. This, for instance, is a variation of a dish I used to eat a lot of at university, though since I’m a much better cook than I was 2-3 years ago it tastes slightly better. Fragrant Chicken Curry

Before we start, I must admit that this is a re-blog of an earlier post of mine which has now been removed. I shall be doing this with a number of my earlier recipes over time as, since the date of their original posting, they have been significantly improved. This curry received the “special treatment” because it is such a fantastic recipe which I have, in the past few months, perfected. Indeed, I now genuinely understand what it takes to make a simply fantastic curry. First of all, don’t hold back on flavour – pack it full, or it shall only disappoint. Secondly, cook it for a significant length of time – this helps the flavour of the spices really develop. Thirdly, cook each type of meat in a different way – chicken needs to be added a mere 10-15 minutes before serving, while beef or lamb needs to be cooked from the start and for a long time.

This is another of my favourite curries, inspired by a recipe taken from a book called An Indian Housewife’s Recipe Book by Laxmi Khurana. I first encountered this astonishing recipe book when I was visiting my girlfriend’s parents’ house, which is where I cooked this delightful meal. I am now, however, a proud owner of a kindle based copy, which set me back a mere £1.99 – an absolute bargain. I strongly recommend the purchase of this book, particularly on the kindle – it really is surprisingly good for recipes, seemingly making the entire experience even more clear than it would otherwise have been.

The First Barbecue of the Year – Tandoori Chicken Skewers

The weather yesterday was ridiculous – surely it must have been the hottest day of the year thus far. This first photo of this blog, which I think is actually pretty good, is testament to just how unbearable it was. I actually had serious problems sleeping last night, only managing to drop off at 2:30 am after running my wrists under the cold tap to cool off. Roll on Madrid where it will be at least 5 degrees Celsius hotter. One bonus of the extraordinary weather we are experiencing is that the tennis is almost continuous. As I write Nadal and Del Potro are battling it out on centre court in a fairly exciting match – considering it involves the usually boring Spaniard. Let’s hope he loses. Why oh why can finding the time, or motivation, to blog be so difficult sometimes? I love doing it, and I always think to myself: I need to do this as much as possible – it can just get a little frustrating. However, by this Friday all of my university commitments, excepting graduation, will be done away with, and I expect to be back to my blogging best. Indeed, if anyone has any recipes they’d like to challenge me to make for under £2 a portion, feel free to comment, or to send me an e-mail. One occasionally needs inspiration, but I do have some rather tasty, and different, ideas up my sleeve. How do homemade fish fingers sound?
