Hazelnut Dukkah

Hazelnut Dukkah Recipe

Dukkah (or duqqa) is an Egyptian dish, into which one might dip bread, which generally contains a mixture of nuts, spices and occasionally herbs. For instance, my recipe contains hazelnuts, which tends to be the norm for this side-dish. However, other potential nuts that will quite happily take their place in dukkah include, but are not limited to, pistachios and cashews. Indeed, almost any nut will work well here.

Since dukkah is supremely flavourful, necessitates very little preparation and takes a surprisingly long time to disappear, even with a number of people clawing at it at once, it is perfectly suited to gatherings and dinner parties. Of course, these characteristics also make it a very effective frugal dish, a very rare trait where nuts are concerned. Still, I guess that’s the current point of my existence – to prove that one can eat well on a budget!

Carrot and Coriander Hummus

Carrots have figured rather heavily in my diet as of late. You see, we reside atop a small supermarket and whilst we refuse to shop there for most items, they frequently reduce items that are going out of date – very frugal. Of course, the food they reduce is never actually past its best, let alone going off, so we consider it best to minimise waste wherever possible. It just so happens that we’ve recently encountered a spate of reduced carrots, an occurrence which has both enabled me to further my experimentation, resulting in this rather special Carrot and Coriander Hummus.

Mint and Coriander Dip

 

As you might imagine, there aren’t many entirely incomprehensible acts that can take place in one’s own garden. However, the fact that some people grow their own herbs, fruit and vegetables and then fail to make any use of them succeeds superbly in making my mind boggle. Luckily, I am neither lazy nor feckless, though some may wish to contest the former, and try my hardest to make use of my own produce as often as is humanly possible. Happily, our mint seems to be rather enjoying our unseasonably wet weather, so this will be the first in a three-part series of simple, mint-based treats. Mint really is a gorgeous herb and one of my favourites, so I shall truly enjoy posting a trio of ideas based around it.

Gujarati Curried Chicken

There is good news to report! After having a conversation with Rosemary, author of Cooking in Sens, about beautiful skillets, my dad, a consummate charity shop ferret, received instructions to find me one. Not only did the ol’ chap deliver, he delivered in style – the skillet you can see below is not only in my eyes beautiful, it is made by AGA. Such a pan would normally set one back at least £60; this pan set us back £5 and is in jolly fine fettle. It appears that one may find it rather difficult to extoll the virtues of perseverance in charity shopping too much.

Sweet Chilli Chickpeas

One thing really does lead to another in this world of bloggery. A few tit-bits seem to lead to the inevitable deluge of information. However, one might well suppose that it is always best to leave one’s readers wanting more – you shan’t get too much out of me, avid followers. If you wish to know more about what instrument I play you may visit the ‘about me’ section – sleuths you lot are not. In reply to the other questions asked: I am spending time with my girlfriend, Katherine, next week and; if I could be any superhero I would be Desperate Dan, since he gets to eat all the pie. As you can see, I intend not to wash away any carefully formed imaginations about myself quite yet – intrigue is rather underrated. More tit-bits will follow, but you shall be forced to practice restraint.
