Banana and Coffee Cheesecake


As my regular readers should know, I have a certain penchant for the buttery biscuit based dessert that is cheesecake. These smooth and creamy treats seem to be all the rage at the moment and this is yet another to add to my growing hoard of cheesecake recipes. Despite this love, the recipe you are all soon to be reading came about due to a stupid amount of spare bananas. We had made banana bread, banana muffins and banana cookies and wanted to make something radically different – what better than a damn good cheesecake?

For some reason I’ve been finding it really hard to get motivated to blog on working days. I don’t know why this is, but I’m sure it will pass. The other negative effect of my new job is that I have less time and energy to cook lots of new things. As such, over the coming days I shall attempt to counter this blog-rot and start bringing you new and exciting savoury meals to try. However, baking is so therapeutic and relaxing it can be done whatever the situation, no matter how lacking in inspiration one finds oneself. Perhaps this is because with baking one generally follows a recipe so there is no real expectation of ingenuity where the base recipe is concerned.

Dark Chocolate Cheesecake

After very little deliberation it has been rather easy to come to the conclusion that cheesecake is my favourite type of dessert. It is so dense and smooth, and as Gregg Wallace of Masterchef fame will tell you, there is nothing better than a nice, moist, “buttery biscuit base”. My original plan for this recipe was to incorporate in some way the chocolate bar Crunchie, but I thought that method wouldn’t work all that well and it might end up a little more expensive than hoped. So instead we went out and bought some cinder toffee, which you can get from most supermarkets or health-food shops. We would have made it instead, but didn’t have enough time. For those of you with enough time here is a good cinder toffee recipe.
