Black Bean and Kidney Bean Burgers

It would appear that recently this blog has unintentionally taken a rather vegetarian slant. The reason for this is that I’ve had to start cooking with whatever is to hand, rather than planning meals properly, due to the fact I now live ‘at home’ and work fairly unpredictable hours. However, fear not my carnivorous friends, meat is on the way – I have a number of top notch recipes for you flesh lovers tucked away just under the hem of my sleeve. In actual fact, there would have been such a recipe yesterday if someone, and I’m not naming names, had remembered to defrost the damn chicken.

Homemade Chicken Stock

Are you one of those types who, after having a delicious, succulent and potentially costly Sunday roast, looks at the carcass of your far from alive chicken and feels slightly guilty, both monetarily and in conscience, about wasting such fine remains? I have a confession, I am one of these ignominious characters who lets his penchant for laziness get the better of him week in week out and neglects to stew up the bones of his deceased hen with but one thing in mind; chicken stock. After all, let’s not beat around the bush, chicken stock does take a fair amount of time and effort to prepare. However, you must take my word for it that by making one’s own stock one really will be sampling the cream of the bone marrow crop.

Lentil and Kidney Bean Chilli

As I’ve already posted an extremely delicious Beef Chilli I thought it would be best to share my recipe for the vegetarian version. To be honest it must be admitted that over the past couple of weeks I’ve fallen off the band wagon of health, so my next few posts shall be dedicated to rectifying this relapse. I think it’s the shock of doing lots of shifts in work that has forced me into my old and particularly sordid ways. However, autumn food is generally of the sort that can be cooked in advanced and left on the stove for heating up and or dipping into – which is why it is also some of my favourite.

Autumnal Indian Soup

My real love for food lies in those dishes pervaded by a sense of warmth and richness, qualities which are epitomised by autumnal cuisine. The idea behind this dish came from a GoodFood recipe entitled Indian Winter Soup. However, it was used more as a guide for what one should do with pearl barley, something I had never cooked before, rather than as a set of defined directions. This meal was simply delicious, so warming and nutritious – this soup really does perfectly encapsulate what autumn, my favourite season, means for my kitchen.
