Noodle Broth

Oriental cuisine is often renowned for being flavoursome, but a little complex. Of course, in many cases – dim sum, for instance – both claims are true. Despite this, an even greater number of dishes, which find their roots firmly planted in the soil of the East, defy the latter assumption with their simplicity and accessibility. Granted, traditional ingredients can often be tricky to come by and often require time-consuming trips to out of town Asian supermarkets, but even specialist ingredients aren’t necessary across the board. Besides, a dish needn’t be explicitly authentic for it to be considered to be from a certain region.

Traditional Beef Hotpot

The Lancashire hotpot is one of the most widely recognised, and loved, British recipes. Traditionally it is a mutton or lamb based dish which includes vegetables and is covered with a layer of sliced potatoes before serving. This is my beef version of the Lancashire hotpot, though it is probably rather far in aesthetical terms from the original dish. The reason I have given it the name ‘hotpot’ is because both dishes share an ideal – they are inexpensive, easy to prepare and extremely hearty and delicious. I tell you, dishes once intended for labourers in heavy industry do work rather well at this time of year.

Rustic Chicken Soup

The past couple of weeks really have been a soup filled fortnight in this frugal household. We have had three different types of soup and it is my honest opinion that the best has been saved for last. It has to be said that this soup, or broth, really benefits from the use of homemade chicken stock as it doesn’t have the rather salty taste that plagues shop bought stocks. This really allows one to control the seasoning of one’s dish, as one expects to be able to do. Indeed, so besotted have I become with the art of stock making that I think I shall soon post more recipes.

Butterbean Broth

 

Butterbean BrothAt the beginning of the university term I decided I wanted to continue eating a wider range of foods. So I picked up tins of a number of different pulses, which come in at a wonderful 30p each and serve two, and thought I’d sort of “invent” a variety of dishes as I went along. Two of these tins contained butter beans, the first of which I used to make butterbean patties, but I really wanted to conserve the shape and textures of the butterbeans, so with some help from BBC Goodfood – which by-the-way is fantastic – this butterbean broth was born.
