Butternut Squash and Leek Soup

Before we get onto the soup may I ask you, my beloved readers, whether your blog has also become akin to a full time job? I seem to find myself spending hours making sure every post is as good as it can be, commenting on other blogs, replying to comments on my blog – it really can take it out of you. Having said that, I’m still very much enjoying my blogging experience and shan’t be going anywhere for what I hope is a considerable period of time. However, I may no longer have the time to reply to every single comment simply because I’m now getting so many of the damn things I can’t keep up. Actually, I say “the damn things” but actually I love each and every one as it means you’ve actually taken an interest.

Beef in Guinness Casserole

As we all know, summer is about eating light, fresh food like my Caprese salad. However, I really like to continue devouring slow cooked wintry meals during the summer. Having said that, this dish isn’t as wintery or as rich as a steak and ale pie and I personally think it worked rather well considering the time of year – especially on a Sunday, in lieu of a roast. This is so delicious I’ve had it a couple of times in the past few weeks; it has such a good depth of flavour and is incredibly satisfying to eat when it has been cooked for at least 3 hours. Indeed, the most important thing to remember when preparing this casserole, or any meal that includes the cheaper cuts of meat, is to cook it for a long time. After 3 hours the fat should have melted away from the meat, enriching the dish, and the meat will have become incredibly tender. This casserole would also work very well with on-the-bone cuts such as oxtail – meat on the bone is incredibly sweet and when cooked the marrow in the bones will melt into the gravy, enriching it further.

I thought I’d continue in the same vein as my last post and bring you yet another delicious recipe with which to use your lovely juicy plums. This will be the last of the plum themed posts for now though, as although we had a very large amount of plums we only actually made muffins and chutney – 11 jars of the stuff. I think the next summer fruit recipe I’ll tackle will be Blackberry jam, but I need to find time to go out and pick them first.

Recently I’ve had relatively little time to dedicate to blogging or cooking – I’ve been working and writing my CV. In fact all I’ve managed to prepare in the past couple of days has been an extremely simple yet fantastically tasty egg and rocket salad. I think simple food is sometimes the best – meals which really show off individual flavours well. The important thing to remember is that you want to showcase the taste of every individual ingredient, so you don’t want to use a flavour which is going to overpower the others. So when making this salad it’s probably best only to use a small squeeze of lemon juice because otherwise you’ll find that it’ll dominate the dish rather than improve it. From a cooking perspective make sure the poached egg is runny inside as it forms an integral part of the salad dressing.

The First Barbecue of the Year – Tandoori Chicken Skewers

The weather yesterday was ridiculous – surely it must have been the hottest day of the year thus far. This first photo of this blog, which I think is actually pretty good, is testament to just how unbearable it was. I actually had serious problems sleeping last night, only managing to drop off at 2:30 am after running my wrists under the cold tap to cool off. Roll on Madrid where it will be at least 5 degrees Celsius hotter. One bonus of the extraordinary weather we are experiencing is that the tennis is almost continuous. As I write Nadal and Del Potro are battling it out on centre court in a fairly exciting match – considering it involves the usually boring Spaniard. Let’s hope he loses.
