Roasted Celebration Squash, Sweet Potato and Spicy Sausage

Last week I bought a squash along with a couple of sweet potatoes with the intention of roasting them for dinner one day in mind. However, it seemed to me as though this alone couldn’t be counted as a complete plate of food. So, when I saw the picture of roasted squash and sausages sitting atop the recipes topic on WordPress, my mind was made up. This is such a quintessentially autumnal dish; the squash is certainly only available at this time of the year, while the sweet potato is more readily available. Not only this, but it is also incredibly satisfying to eat, with the heat provided by the sausages cutting across the sweetness of the squash and sweet potato.

Traditional Beef Hotpot

The Lancashire hotpot is one of the most widely recognised, and loved, British recipes. Traditionally it is a mutton or lamb based dish which includes vegetables and is covered with a layer of sliced potatoes before serving. This is my beef version of the Lancashire hotpot, though it is probably rather far in aesthetical terms from the original dish. The reason I have given it the name ‘hotpot’ is because both dishes share an ideal – they are inexpensive, easy to prepare and extremely hearty and delicious. I tell you, dishes once intended for labourers in heavy industry do work rather well at this time of year.
