Pure Cocoa Hot Chocolate

Pure Cocoa Hot Chocolate

Sweet, bitter or white, hot chocolate is the ultimate hug in a mug. It is warm, luxurious and, most importantly, contains a rather popular stimulant about which you may or may not have heard. Personally, a rich and bitter hot chocolate appeals to my inner desires, so for this recipe pure (100%) cocoa paste seemed in order. Though the recipe includes both milk and sugar – two of three fundamental parts of milk chocolate – pure cocoa helps lift this rendition above the attempts of most cafés. Indeed, insipidity reigns supreme in the world of hot chocolate – time to turn things around.

Blood Orange and Couscous Salad

orange-and-pomegranate-salad

The blood orange season is drawing to a close – March will be their last hurrah – though their tart flavour and vibrant colour more than makes up for a rather ephemeral existence. The best way to consume a regular orange is to feast on its sweet flesh, alone and unadulterated. However, as a result of their somewhat more complex flavour things are a little different when it comes to blood oranges – it makes them ideal candidates for all manner of salad. Though, of course, they do remain a pleasure when consumed in culinary isolation.

Ale Braised Ox Cheek

Ale Braised Ox Cheek

As you may have deduced, when an animal is slaughtered every part of it is butchered. Though this may appear, on the surface, to be a somewhat obvious and worthless statement, it does highlight potentially important ramifications. Remember, every popular cut of meat (leg of lamb) has a less-loved or even unknown counterpart (ox cheek, lamb neck or breast) – the meat that isn’t used gets wasted or goes under appreciated. This is a travesty on so many levels, not least because less popular cuts are often the most delicious and economical.

Pan-fried Chorizo and Cabbage

Pan-fried chorizo and cabbage

Chorizo is one of those very rare ingredients that gets along with anything in its vicinity – food or otherwise (except perhaps pigs). Not only does chorizo accompany kale to pleasing effect, it is suited rather handsomely to cabbage. This naturally leads one to suspect that our spicy Spanish friend could be bosom buddies with the entire brassica clan – all should be revealed in time. Meanwhile, why not make the time to appreciate the deep hues and rich flavours which accompany these wonderful ingredients?
