I have to say that I’m still finding it hard to find the inspiration to ramble before recipes, so my thinking is maybe that talking about it will ignite inspiration. I guess the thing about writing is that if one doesn’t feel like it, one finds it a rather hard thing to force. It makes me wonder how people who are paid to write for a living, something which I’m interested in, manage to do it so regularly and to, in some cases, such a good standard. Perhaps it’s the fact that they usually have something defined to write about and therefore it doesn’t have to come entirely off the top of their head. Then again, for many money is inspiration, something necessary which draws out the best, and worst, in people. I like to think that this particular recipe has drawn my best!

Individual Egg and Spinach Bakes

Baked Eggs

In an attempt to cover all bases I bring with me today a rather delightful and fairly frugal recipe. I’ve been trying recently, with more or less success, to break out of the lunchtime monotony which became either a bacon sandwich or Marmite and Dairylea on toast. I guess it’s testament to the deliciousness of the aforementioned “meals” that they became monotonous; nevertheless the fact remains the same – boring they became. It also struck me that indulging in these delights was possibly rather unhealthy, particularly in light of the amount of butter slathered onto each chunk of white bread. I’m not sure if this recipe is technically any healthier than the others, but it is certainly more fresh and rather less salty and processed. After all, spinach has health benefits that are numerous and varied!

The Victoria Sponge – A British Classic

By and large I have to admit that I’m not much of a cake man – I often find, perhaps unsurprisingly, that they are a little too cakey for my liking. By that I mean there is a little too much sponge and not enough of anything else. However, if done perfectly, a Victoria Sponge from any party shop can be absolutely delightful. I think the key to making a good sponge is to use high quality eggs, because their taste really comes through in the mixture. As such, if you use bad eggs it will just taste a little dodgy – luckily we keep our own chickens, so that was covered for perfectly. Another bonus of the victoria sponge is that it’s so simple, and therefore cheap to make – it isn’t even iced. It really is the perfect British cake to be enjoyed, as Queen Victoria did, at 11 o’clock with a spot of tea.

Dark Chocolate Cheesecake

After very little deliberation it has been rather easy to come to the conclusion that cheesecake is my favourite type of dessert. It is so dense and smooth, and as Gregg Wallace of Masterchef fame will tell you, there is nothing better than a nice, moist, “buttery biscuit base”. My original plan for this recipe was to incorporate in some way the chocolate bar Crunchie, but I thought that method wouldn’t work all that well and it might end up a little more expensive than hoped. So instead we went out and bought some cinder toffee, which you can get from most supermarkets or health-food shops. We would have made it instead, but didn’t have enough time. For those of you with enough time here is a good cinder toffee recipe.

Forget about having pasta or rice every day, and instead make these wraps and fill them with absolutely anything. So far we’ve had my homemade hummus, as well as a vegetable fajita mix – both of which are delicious. These homemade wraps are incredibly simple to make, they just require a little patience and a rolling pin.
