
Weekends are the perfect time to enjoy simple, indulgent lunches full of wonderful produce. With its powerful cheddar and rich butter, this recipe for Leek Toasties couldn’t be nearer the ideal.
Slicing through an oozing layer of cheese into succulent sauteed leeks and crispy sourdough bread is an absolute delight for the senses. Everyone needs a toastie fix from time to time and this, surely, is the place to get it.
Doesn’t that bread look delicious? Well, it’s special. You see, a couple of weeks ago a fellow Bristol-based blogger by the name of Joanna offered, very kindly, to bake me a couple of loaves.
As expected, Joanna being something of an expert baker, the bread was absolutely wonderful and made for excellent leek toasties. You really must check out her blog, Zeb Bakes. Oh, and she has two wonderful dogs… On to the recipe!

Leek Toasties
Serves 2
Ingredients:

2 slices sourdough bread
-
1 leek, finely sliced
-
20g butter
-
40g mature cheddar cheese, crumbled
-
a pinch of salt
-
a twist of pepper
Method:

Melt the butter in a heavy-based frying pan. Gently sweat off the leeks with a pinch of salt. Toast the bread under the grill on one side.

Layer each with the softened leeks. Top each slice with the crumbled cheddar and grill until melted (but not crispy). Serve with a sprinkling of black pepper.


Cost: A little cheese and butter here and there never did anyone’s bank any harm and this dish does nothing to buck that trend. Indeed, the entire lunch should set you back no more than £1.10.

Oh my they look GOOOOOODDD!!!!! I haven’t got any leeks in the fridge but I have got mushrooms. I know what snack I’ll be devouring in about 10 minutes. Oh how I love to work from home.

What a wonderful idea! The combination has never ever occurred to me.
On hand:
No sourdough bread, but pumpkin pit. No mature cheddar, but medium aged dutch cheese and some pecorino.
Lacking: grill.
So I’m thinking a little cheese sauce (bechamel) dutch cheese, top with pecorino and then zap it with the gas-flame thing.

OH yes… and the cheese, the cheese was amazing.
That looks great although there is a little stall in borough market that I think does the perfect cheese and leek toastie. You must go if ever in London and bumbling around the market. Two pieces of sourdough, cheddar and compte, and leek and garlic. Delicious.
I do enjoy a trip to borough market. I’ll have to pop along next time I’m in London and compare.

That just looks like a little slice of heaven on a plate! I was brought up on leeks and have a great fondness for them. Would never have thought to put them on toast!
