Poached Egg on Spinach

Spinach is an impressively versatile ingredient. Graced with heaps of inimitable flavour and significant nutritional value – a trait famously demonstrated by Popeye – this superfood has no trouble stamping its unique mark on many a dish. Despite this, simplicity is the key when attempting to unlock the full potential of spinach; a knob of butter is all that is necessary to bring to the fore its vibrant colour and delicious, though complex, flavour. Once wilted, this iron and calcium rich plant serves very well as a topping for toast, morning, noon and night – throw an expertly poached egg into the equation and what you have is a meal fit for any occasion.

Rocket (Arugula) Pesto

Pesto is one of those timeless ingredients that everyone knows and most people love. However, variety is the spice of life and a little change to the basic recipe for pesto could do us all a little good. Indeed, though rocket is, like basil, green and incredibly adaptable, it has its own very distinctive qualities. For instance, unlike basil, rocket has a very peppery, almost spicy, taste which gives this pesto a rather unexpected kick. In reality I’m rather loath to call this creation pesto, since its character is vastly different from what people usually assume the term to mean. If it wasn’t for the fact that the process was almost identical a more apt term for this devilish creation would surely have been tapenade. In my mind, tapenade evokes thoughts of a much stronger flavour profile than does pesto.

Spicy Tomato Baked Eggs

If there’s one thing I don’t eat enough of, it’s eggs. Considering we own three chickens, which produce 2-3 eggs every day, and have done for the past 2-3 years, eggs are rather overlooked on our food eating agenda. This is a shame, since it’s always best to use easily exploitable resources. It would make more economic sense, for us to eat more eggs than we do. The second, and possibly most important, consideration behind this recipe is that I simply don’t eat well enough in the mornings. My breakfast usually consists of some ridiculously over-priced and over-sweet cereal, or nothing at all. Neither of these options are particularly healthy. As such, I want to try and create some new and interesting breakfast dishes, which include egg. This recipe isn’t strictly or explicitly for the breakfasting hour. However, it worked jolly well for me.

Carrot and Coriander Soup

In the past week, and particularly the past 3 or 4 days, I’ve begun what is commonly known as a “health-kick”. Basically this means walk everywhere, eat healthily and go for a 2.5 mile jog every other day. One thing I have completely stopped eating is bread – I haven’t touched the stuff. In some way I miss it, in others I don’t. Basically the problem with bread is that although good bread is cheap and tastes absolutely delicious, it can make one feel really bloated. When added to the fact that bread, and white bread in particular, is essentially a bad carbohydrate that, if eaten in excess, can really pile the pounds on. In addition I’ve completely stopped drinking cider, a drink which is even more bloating than beer, and a lot sweeter. So, recently I’ve started feeling much healthier and already a little slimmer.
