Tarka Dhal

Dhal is one of my very favourite Indian foods. It’s both simple and honest, not to mention so pleasantly frugal that one could it all day every day and never notice it make a dent in one’s finances. To the uninitiated, dhal may at first appear sloppy and unappealing – rather like porridge – but once you’ve had a chance to experience its dense and satisfying texture your views on Indian cuisine will be forever enhanced.

Coconut is a frequently used ingredient in curry across the Indian subcontinent and, consequently, Britain. In my experience, most British proponents of the coconut tend to use the desiccated variety, which perfectly acceptable. However, though acceptable, desiccated coconut lives up to its name through lack of moisture, passion and interest. Indeed, until you’ve dabbled in fresh, you’ve never properly experienced coconut.

Saag Aloo

Saag Aloo is a North Indian dish usually made using spinach and potato, though ‘saag’ is a term also used to describe other greens, such as mustard leaves. There are many ‘saag’ based dishes across India, with many types of greens featuring heavily in Odisha and Punjabi cuisine (though not exclusively). ‘Aloo’ – potatoes – also feature heavily in food not only across India, but the world and indeed, my kitchen. They complete and add a little substance to what is a pleasantly descriptive name for a delicious and nutritious dish.

Onion Bhaji Recipe

Onion bhajis are the perfect accompaniment for many an Indian dish – meat-based curries benefit particularly from their presence as they provide a tasty, vegetarian contrast. Most people insist on purchasing sub-par bhajis from their local supermarket – I know not why – despite the fact they are exceedingly simple and quick to make – as the recipe below attests. Let’s hope that the almost seductive, golden-brown hue of these unassuming, spicy Indian snacks weans the general public off their mass-produced supply and onto something a little more choice. Excuses shall be ignored.

Fragrant Red Lentil Dhal

This is my third dhal recipe, but it is fundamentally different from the other two in that it wasn’t conceived as a side-dish, though it may act as such. What this means is that while the flavour of the other two was delicious, it was exceedingly simple; whereas the taste of this dhal will excite and ignite your palette, though not in a literal sense. Indeed, the combination of black onion seeds, which are surprisingly fragrant, and garam masala, a spice mix known for its dark perfume and body, make this an enticing prospect for even the more snobbish taste buds in existence.
