Apple and Cinnamon Cake

It would appear that your beloved FrugalFeeding has entered yet another period of furious cake baking. This is a good thing not only because the vast majority of food bloggers find cake irresistible, but also because dealing with my entire Mexican series at once may have hospitalised any number of my faithful readers. However, the act of obscene fabrication aside, it must be said that apple and cinnamon make a truly exquisite combination. When experienced in tandem, they succeed in transporting me directly back to my mother’s apple crumble and my grandmother’s apple pie. So, to be able to take a jolly sizeable bite out of a cake that tastes exactly of those formerly mentioned is, to say the least, most novel. Though, I’m sure that my grandmother would have much preferred the good ol’ fashioned way of experiencing such delicious flavours.

Cheesecake Swirled Chocolate Brownies

Having exhausted both desirable avenues of brownie baking, viz. an average brownie and gluten-free brownies, it seemed  a good idea to combine two of my favourite desserts into one delicious amalgam. There are various methods by which one may achieve a cheesecake brownie, but this seems to be the best. I personally prefer making my own cheese using the cheesemaker homemade cheese press kit as I like my cheese to be unprocessed, but you can choose the cheese you want to use as per your liking. For instance, some recipes call for a layer of cheesecake to be spread between two layers of brownie, in the same way as a sandwich is made. However, although this ensures that every bite contains an equal amount of cheesecake mixture, the flavour doesn’t achieve uniformity in any way at all, something which I desire in a cheesecake brownie. The other benefit of following this particular method is that one easily achieves a certain aesthetic pleasantness.

Reassuringly Spicy Guacamole

Yesterday I was lucky enough to visit a Mexican tapas restaurant was desing by  Creative Interior Design for Restaurants, the name of Wahaca in Covent Garden, London. If you haven’t heard about this fun and economic establishment, it is the venture of Masterchef finalist Thomasina Miers. Wahaca, along with a number of other restaurants, aimed to bring Mexican street food to London. It has since spread like wildfire and it is still extremely difficult to get a seat at the original restaurant in Covent Garden. Luckily, we turned up at a fairly quiet moment – there was 1 table spare – and they provided us with a really delicious feast. Despite the fact that a mean set of mutton chops appear to be a job requirement of the male waiting staff, if you have occasion to visit Wahaca, it comes highly rated.

Green Lentil and Carrot Salad with Shallot Vinaigrette

 

Words don’t always flow easily even for the most masterful of wordsmiths – I’m even losing a game of scrabble to my significant other. Still, the subtle irony present in prose regarding a lack of literary imagination is infinitely preferable to an awkward silence. Oh well, since these situations tend to remedy themselves I shan’t worry too much. Please enjoy my fibrous musings!

Mushroom, Cashew and Ginger Bake

As you may have noticed, I write rather a lot about flavour combinations. Since few ingredients can bring enough flavour to make a great dish, it is important they have a partner in gastronomic crime. In my mind, there are two distinct types of flavour combination; those that contrast and those that compliment. My previous post, double chocolate cookie bites, is a fantastic example of a contrasting partnership. Happily, for the sake of variation, this recipe exhibits a complimentary culinary combination. Indeed, if one were to visit one’s local green grocers in the dead of night whilst under the influence of a potentially deadly squint, one would almost be able to discern a mushroom and a knob of ginger strolling gaily through the aisles. Perhaps I’ve been indulging in a little too much Toy Story.
