You’ll all agree that supermarkets tend to be fairly generic, drab spaces that people frequent only out of necessity. As food bloggers we soon grow weary of these commercial husks for being entirely unenticing and lacking in variety. However, it seems that UK based supermarket chain Morrisons, known for being the smallest and least corporate of the large supermarkets, is bucking the trend with surprising effect. For instance, the Aberystwyth ‘branch’ has recently undergone what I can only describe as a major upgrade and now offers a reasonably comprehensive variety of fresh fruit and veg. Any supermarket that offers five types of chard and four types of kale has succeeded in securing a tentative thumbs-up from this quarter – though I would, of course, rather support local business.

Ratatouille

Ratatouille

The difference between a mediocre Ratatouille and an exceptional one is its consistency. When making this classic French dish, it is important to keep the chunks of vegetable (or rather, fruit) intact. Ratatouille doesn’t require as much cooking as some appear to believe, but it does take time to perfect it. Spend your time wisely in the preparation and an exceptional ratatouille will almost certainly follow, boil it or stew it and your guests can expect to receive soggy, limp and unimpressive ingredients – no matter how good they taste.

Roasted Sweet Potato and Parsnip Soup

I am not a vegan by any stretch of even the most delusional lunatic’s imagination. It’s difficult to admit it to you guys, but I covet all things animal. However, it would be unfair to describe me as an ‘average meat eater’ – meat finds its sordid way onto my menu once, maybe twice, per week. After all, meat can be both healthy and expensive; my diet naturally contains a good proportion of vegan and vegetarian food. It seems to me amongst the various communities of meat eaters there is a lot of negativity directed towards veganism. Though it is often true that I don’t entirely agree or understand why people ‘turn’ vegan, you won’t encounter any such negativity here. I’m perfectly cognisant of the fact vegan food can taste just as good as that which contains meat or dairy, sometimes more so. Indeed, I feel privileged to be, for the first time, part of the Virtual Vegan Potluck.

Golden Oat and Raisin Cookies

Whenever I see that another blogger has made cookies using oats I get a jealous impulse to make some of my own. Baking is, in my opinion, the true calling for an oat – porridge just doesn’t do it for me. The texture of oats seems to impart exactly what I look for in a cookie; a homeliness that is hard to find in the more flashy cookies. In my original oat and raisin cookie recipe I remarked that chocolate chip cookies are all well and good, but if I’m being honest, oats are where it’s at! However, I need to be more careful since using such a grammatically troubled phrase may well give me a nosebleed.
