Rye and Spring Onion Bread

Following my rather successful recipe for Pumpkin and Sage Bread, I thought I’d bring you another bread recipe from Gail Duff’s Vegetarian Cookbook. Is there, in all honesty, anything quite as good as baking bread in one’s own home? Indeed, I urge you to forget the mass produced bread which is sold at a premium in supermarket and instead to begin baking your own bread when possible. The taste of a home-baked loaf is very difficult to replicate and the smell emanating from the oven will fragrance your house wonderfully.

Pumpkin and Sage Bread

Hello, Frugalers! I have returned from a week long hiatus in Aylesbury, a large town home to both Katherine and a world famous breed of duck – there are no prizes for guessing its name. I must admit that the time spent away from work and blogging was rather welcome, though I did miss the latter considerably. Indeed, armed with the knowledge that on my return to Aberystwyth our new kitchen would not yet be installed, my girlfriend and I set about cooking all manner of treats so that I could continue to blog following my break. Fear not, faithful readers, cooking is also a favourite pastime of my wonderful woman – I was not putting the blog ahead of our relationship, I don’t think.

Ena’s Gingerbread

A few weeks ago I purchased a beautiful loaf tin, which is actually made of tin, as part of my graduation present. I’ve been so excited about using it, but for some reason didn’t actually get round to doing so until today. However, it turns out that it works just fine – I have already decided what my next loaf cake shall be. This is a favourite recipe of Katherine’s grandmother, Ena, who lives in Sunderland; though I think the recipe was originally taken from an old Be-Ro cookery book. Wherever it comes from it is utterly delicious and incredibly dense and sticky; just how gingerbread ought to be. Just remember that any cake recipes those of a certain age make use of are generally sound, simply because they’ve been tested so many times they must be delicious.

Lavash Flatbreads

Bread can often be very heavy; it sits in one’s stomach for quite a while and the body finds it rather hard to digest. As such, I have been trying to lower my bread consumption, which is fine, except that one can find oneself left a little hungry without at least a little meal time carbohydrate. This thought process is really what led me to make these flatbreads, something I finally got round to doing today after getting rained off the tennis court. They really have been a long time coming as you can probably tell from the date at the top of the recipe – I’m afraid to admit that I was eating a branded version instead, I apologise.

Forget about having pasta or rice every day, and instead make these wraps and fill them with absolutely anything. So far we’ve had my homemade hummus, as well as a vegetable fajita mix – both of which are delicious. These homemade wraps are incredibly simple to make, they just require a little patience and a rolling pin.
